Blueberry “Mug” Cobbler
Okay I will admit, that this recipe is not really a mug recipe. But I did fashion it after the mug-cake trend. The fact is that cobblers traditionally do not “puff” as you cook them so it looks a little sad in a mug. But in a small flat bowl it works perfect.
- 1 1/2 teaspoons sugar
- 1 teaspoon white wheat flour
- 1/8 teaspoon cinnamon
- Pinch salt
- 1/3 cup blueberries
- 2 tablespoon oats
- ½ tablespoon brown sugar
- 11/2 teaspoons butter
In a small flat ramekin style bowl, stir together 1 ½ teaspoons sugar, 1 teaspoon flour, cinnamon, and salt. Add the blueberries tossing to coat.
In a separate small bowl, stir together the oats, brown sugar, and butter. With a fork mash the mixture together until the butter is well distributed. Place this mixture on top of the berries.
Microwave for two minutes; in one-minute increments. Serve immediately.
